Ingredients

For the Chicken:

  • 3 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • ¼ cup Italian dressing
  • 1 tablespoon Adobo seasoning
  • 1 tablespoon dried Italian herbs
  • 1 teaspoon kosher salt
  • 1 tablespoon Sazon seasoning optional, homemade or store-bought

For the Breading (optional):

  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Season the Chicken: In a large mixing bowl, combine the chicken cubes with Italian dressing, Adobo seasoning, dried Italian herbs, kosher salt, and Sazon seasoning (if using). Toss well to coat all the chicken evenly. Let the chicken marinate for at least 10 minutes (or up to 24 hours for deeper flavor).
  • Prepare the Air Fryer: Preheat your air fryer to 400°F (200°C) for 3-5 minutes. Spray the air fryer basket with olive oil spray to prevent the chicken from sticking.
  • Coat the Chicken: Optionally, combine the flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper in a shallow dish. Dredge the chicken pieces in the mixture, pressing gently to ensure an even coating.
  • Air Fry the Chicken: Arrange the seasoned or breaded chicken in a single layer in the air fryer basket, making sure there’s space between each piece. Spray the chicken lightly with olive oil spray.
  • Cook the Chicken: Air fry the chicken at 400°F for 12 minutes, flipping halfway through. The chicken should be golden brown and cooked through, with an internal temperature of 165°F.
  • Serve: Let the chicken rest for a few minutes, then serve with your favorite sides or add to wraps, salads, or bowls.

Notes

  • For extra crispiness, you can add a second layer of breadcrumbs or use a light coating of egg before dipping in the flour mixture.
  • Storage: Leftover chicken bites can be stored in an airtight container in the fridge for up to 4 days.
  • Freezing: To freeze, flash-freeze the chicken pieces by placing them on a baking sheet in a single layer for 1-2 hours. Then, transfer to a freezer-safe bag and store for up to 3 months.
  • Reheating: Reheat leftover chicken bites in the air fryer at 375°F for 5 minutes to restore their crispiness.
