Ingredients

  • 1.5 lbs ground beef lean, preferably 97% lean
  • ¾ cup panko breadcrumbs
  • ¾ cup ketchup divided
  • 1 egg
  • ½ tsp seasoned salt
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • 1 tbsp Worcestershire sauce
  • 1.5 cups water for Instant Pot

Instructions

  • In a large bowl, combine ground beef, panko breadcrumbs, egg, seasoned salt, onion powder, garlic powder, Worcestershire sauce, and ½ cup of ketchup. Mix gently until well incorporated (do not overmix).
  • Divide the mixture in half and form two small loaves that will fit in your Instant Pot mini loaf pans.
  • Add 1.5 cups of water to the Instant Pot, then place the trivet inside. Set the mini loaf pans on the trivet.
  • Seal the Instant Pot lid and set the vent to the sealing position. Cook on high pressure for 25 minutes.
  • Once cooking is complete, do a quick release of the pressure. Carefully remove the mini loaf pans from the Instant Pot.
  • Preheat your oven’s broiler. Pour out any drippings from the pans and spread the remaining ¼ cup of ketchup on top of the meatloafs.
  • Place the pans under the broiler for 5 minutes, or until the ketchup caramelizes and turns golden.
  • Allow the meatloaf to rest for 5 minutes before removing from the pans and slicing.

Notes

  • Use lean ground beef for the best results. For extra moisture, you can mix in a small amount of ground pork.
  • Don’t overmix the meat mixture to ensure a tender texture.
  • If you don’t have mini loaf pans, you can use a regular loaf pan (make sure it fits in the Instant Pot).
  • Broiling is optional but recommended to give the meatloaf a delicious caramelized topping.
