Ingredients

  • For The Beef
  • 300 g 10 oz flank or sirloin steak, thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 1 teaspoon brown sugar or honey
  • For The Sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon brown sugar or honey
  • 1 teaspoon dark soy sauce optional
  • 1 teaspoon rice vinegar optional
  • 1/3 cup water
  • 1 1/2 teaspoons cornstarch
  • For Stir-Fry
  • 200 g 7 oz thick wheat or egg noodles
  • 2 tablespoons neutral cooking oil
  • 3 cloves garlic minced
  • 1 teaspoon grated ginger
  • 2 green onions chopped
  • Sesame seeds for topping

Instructions

  • In a bowl, combine beef, soy sauce, cornstarch, sesame oil, and sugar. Mix and let rest.
  • Cook noodles according to package directions. Drain and set aside.
  • In a small bowl, whisk the sauce ingredients until smooth.
  • Heat oil in a wok over high heat. Add beef and sear until browned. Remove from pan.
  • Add garlic and ginger to the same pan. Stir briefly.
  • Pour the sauce into the pan and simmer until it thickens and becomes glossy.
  • Add noodles and toss to coat in the sauce.
  • Return the beef to the pan and mix well.
  • Top with green onions and sesame seeds before serving.

Notes

Slice beef very thin for the best texture.
Use high heat to caramelize the beef.
If the sauce becomes too thick, add 1 tablespoon of water.
Dark soy sauce adds color and deeper flavor but is optional.
For spice, add chili crisp or sriracha.
