- 125 g caster sugar superfine baking sugar
- 125 g softened butter
- 2 large eggs
- 1/2 tsp vanilla extract
- 125 g self-raising flour
- 1/2 tsp cinnamon or nutmeg optional for a spiced twist
- 1 pouch of Dr. Oetker Easy Fill Cake Centres Rich Chocolate or homemade ganache
- 1 canister of Dr. Oetker chocolate icing
- 50 g white sugar paste fondant icing block
- Dr. Oetker gold shimmer spray
- Chocolate balls or caramel drizzle for decoration
Preheat the oven to 190°C (375°F) or Gas Mark 5.
In a large mixing bowl, cream together softened butter and caster sugar until light and fluffy.
Add eggs one at a time, followed by vanilla extract. Mix well.
Fold in self-raising flour and optional spices (cinnamon or nutmeg). Mix until just combined.
Spoon the batter into 12 cupcake cases, filling them 2/3 full.
Bake for 15-18 minutes, or until golden brown and a toothpick comes out clean.
Let the cupcakes cool completely on a wire rack.
Fill the cupcakes with chocolate ganache or cake filling.
Frost with chocolate icing and decorate with fondant leaves sprayed with gold shimmer and chocolate balls or caramel drizzle.
