Ingredients

  • ½ cup plain Greek yogurt 2%
  • 2 medium eggs
  • cup erythritol or preferred sweetener
  • 2 tsp vanilla extract
  • For the Coating:
  • 3 –4 tbsp melted butter
  • 4 tbsp erythritol or other sweetener
  • 1 tbsp ground cinnamon

Instructions

  • Prepare Dough:
  • In a bowl, mix flour, baking powder, and salt. In another bowl, whisk cottage cheese, yogurt, eggs, erythritol, and vanilla until smooth. Combine wet and dry ingredients to form a soft dough.
  • Shape Donut Holes:
  • Scoop 1-inch dough balls using a spoon or cookie scoop. Roll gently into smooth balls.
  • Preheat Air Fryer:
  • Heat air fryer to 320°F (160°C) for about 3 minutes.
  • Air Fry:
  • Place balls in the basket in a single layer. Air fry for 8–10 minutes, shaking halfway through, until golden brown and crisp.
  • Coat:
  • Brush warm donut holes with melted butter, then roll in cinnamon-erythritol mixture to coat evenly.
  • Serve:
  • Let cool slightly, then enjoy warm as a healthy snack or dessert.

Notes

Use monk fruit or stevia if preferred over erythritol.
For the best texture, don’t overmix the dough.
