Ingredients

  • 1 ¼ cups gluten-free flour Bob’s Red Mill 1-to-1 or King Arthur Measure for Measure
  • ¼ cup cane sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • cup unsalted melted butter
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon lemon juice
  • 2 large eggs
  • ½ cup apples peeled and chopped

For the Glaze:

  • 1 cup powdered sugar
  • ¼ cup unsalted butter melted
  • 1 tablespoon milk
  • 1 teaspoon pure vanilla extract

Instructions

  • Prepare the Dry Ingredients: In a large bowl, whisk together the gluten-free flour, cane sugar, ground cinnamon, baking soda, and salt.
  • Combine Wet Ingredients: Melt the butter and allow it to cool slightly. Add the vanilla extract, lemon juice, and eggs, whisking until smooth.
  • Mix Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in the chopped apples.
  • Form the Fritters: Use a cookie scoop to drop spoonfuls of batter onto parchment paper. Ensure the fritters are spaced out for even cooking.
  • Air Fry: Preheat the air fryer to 375°F for 5 minutes. Place the fritters in the air fryer basket, spray with oil, and cook for 10–12 minutes until golden brown.
  • Make the Glaze: While the fritters cook, mix together the powdered sugar, melted butter, milk, and vanilla extract to form a smooth glaze.
  • Glaze the Fritters: Drizzle the glaze over the warm fritters and allow it to set before serving.

Notes

  • If you prefer oil frying, heat oil to 350°F and cook the fritters until golden brown on both sides.
  • For dairy-free fritters, substitute the butter with plant-based butter.
  • Feel free to experiment with other fruits like peaches or pears.
