In a large bowl, add the cubed chicken. Add olive oil, lemon juice, paprika, garlic powder, onion powder, lemon pepper seasoning, and salt. Mix well to coat the chicken evenly. Cover and refrigerate for at least 15 minutes, or up to 4 hours for enhanced flavor.
Prepare the Garlic Parmesan Butter:
In a saucepan, melt the butter over low heat. Add the minced garlic and simmer for 2 minutes until fragrant. Stir in the grated Parmesan cheese and 2 tsp lemon juice (optional). Set aside to keep warm.
Skewer the Chicken:
Thread the marinated chicken pieces onto wooden or metal skewers. If using wooden skewers, soak them in water for 20-30 minutes to prevent burning.
Cook the Skewers:
Grilling Method: Preheat the grill to medium-high heat (about 400°F). Grill the skewers for 8-10 minutes, turning occasionally until the chicken reaches an internal temperature of 165°F. Brush with the garlic Parmesan butter throughout the grilling process.
Oven Method: Preheat the oven to 350°F. Arrange the skewers on a rimmed baking sheet and bake for 15-18 minutes, turning once and brushing with garlic butter during baking.
Air Fryer Method: Preheat the air fryer to 350°F. Place the skewers in the air fryer basket and cook for 10-12 minutes, flipping halfway through and brushing with garlic butter once or twice.
Serve:
Once the chicken is cooked, remove from heat and let it rest for a few minutes. Brush the skewers generously with the remaining garlic Parmesan butter and garnish with fresh parsley and a squeeze of lemon juice.
