Ingredients

  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 1 large egg
  • 2 tbsp fresh parsley chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • For the Garlic Parmesan Sauce:
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp flour
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • 1 tbsp parsley chopped
  • Pinch of salt to taste

Instructions

  • Preheat Oven: Set oven to 375°F (190°C). Grease a muffin tin or baking dish.
  • Mix Ingredients: In a large bowl, combine ground chicken, onion, garlic, parmesan, breadcrumbs, egg, parsley, salt, and pepper. Mix gently until just combined.
  • Shape and Bake: Scoop the mixture into muffin cups or shape into a loaf pan. Bake for 22–25 minutes (mini loaves) or 55–60 minutes (full loaf) until internal temperature reaches 165°F (74°C).
  • Make Sauce: In a saucepan, heat olive oil over medium heat. Add garlic and sauté 1–2 minutes. Whisk in flour until smooth. Slowly add heavy cream, whisking constantly. Stir in parmesan and parsley until thick and creamy.
  • Serve: Spoon warm garlic parmesan sauce over each meatloaf. Garnish with parsley and extra parmesan if desired.
