Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 tbsp pumpkin pie spice
  • 1 cup pure pumpkin puree
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • ½ cup milk

For the Streusel:

  • ¼ cup unsalted butter melted
  • ¼ cup all-purpose flour
  • 1 cup brown sugar
  • 1 tbsp cinnamon
  • Pinch of salt

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×9-inch pan.
  • Mix the flour, sugar, baking powder, salt, and pumpkin pie spice in a bowl.
  • Add pumpkin, oil, vanilla, and milk. Stir until well combined.
  • Pour batter into the pan.
  • In a separate bowl, mix the melted butter, flour, brown sugar, cinnamon, and salt for the streusel. Sprinkle over the batter.
  • Bake for 30-40 minutes or until a toothpick comes out clean.
  • Let it cool before serving.

Notes

  • Use pure pumpkin puree, not pumpkin pie mix.
  • For a thicker streusel, chill the mixture before adding to the cake.
