Ingredients

  • 1 lb ground beef or ground turkey
  • 1/3 cup oatmeal or breadcrumbs
  • 1/3 cup Parmesan cheese
  • 1 large egg
  • 1/2 cup tomato sauce or ketchup
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tsp Worcestershire sauce
  • Optional: diced vegetables onions, mushrooms, carrots, zucchini

Instructions

  • Preheat oven to 350°F (175°C). Grease a muffin tin with cooking spray or oil.
  • In a large bowl, mix together ground meat, oatmeal, Parmesan cheese, egg, tomato sauce, garlic powder, onion powder, Worcestershire sauce, and any optional veggies. Season with salt and pepper.
  • Spoon the meat mixture into the muffin tin, filling each cup about 3/4 full.
  • Top each muffin with a spoonful of tomato sauce or ketchup.
  • Bake for 25-35 minutes or until a meat thermometer reads 160°F (71°C) for beef or 165°F (74°C) for poultry.
  • Let cool for a few minutes before serving.

  • For added flavor, try using BBQ sauce instead of ketchup.
  • Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 3 months.
