Ingredients

  • 2 slices thick bread sourdough, brioche, or whole wheat
  • 2 large eggs room temperature
  • ½ cup shredded cheese cheddar, mozzarella, or gruyere
  • 2 tbsp butter or olive oil for dairy-free
  • Salt and black pepper to taste
  • Optional: chives paprika, hot sauce

Instructions

  • Use a cookie cutter or glass to cut a hole (2–3 inches wide) in the center of each bread slice.
  • Heat a skillet over medium heat. Add 1 tbsp butter and toast bread until golden on one side.
  • Flip the bread slices. Add the remaining butter to the pan.
  • Crack one egg into each hole. Season with salt and pepper.
  • Sprinkle cheese around the egg and on the bread edges.
  • Cover the skillet and cook until egg whites are set and cheese is melted (about 2–3 minutes).
  • Garnish with chives, paprika, or hot sauce. Serve immediately.

Notes

  • Use thick bread to prevent sogginess.
  • For runny yolks, cook uncovered; for firmer yolks, cover for an extra minute.
  • Dairy-free? Swap cheese for vegan shreds and butter for olive oil.
  • Save the cut-out bread circles—they make perfect little toast bites.
