Ingredients

  • pounds lean ground beef 90% lean
  • 1 cup Italian breadcrumbs
  • 2 large eggs
  • ½ cup onion finely diced
  • 2 teaspoons garlic powder
  • 2 teaspoons chopped parsley
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ cup BBQ sauce

For the Glaze:

  • cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon yellow mustard

Instructions

  • Preheat the oven to 350°F (175°C). Line a baking sheet with foil and coat with non-stick spray.
  • In a large bowl, combine the ground beef, breadcrumbs, eggs, onion, garlic powder, parsley, salt, pepper, and BBQ sauce. Mix gently with your hands until fully combined.
  • Shape the mixture into a loaf, about 8 inches long and 4 inches wide, and place it on the prepared baking sheet.
  • Bake for 45 minutes. While baking, whisk together the glaze ingredients (ketchup, brown sugar, mustard).
  • After 45 minutes, remove the meatloaf from the oven. Spread the glaze over the top and return to the oven. Increase the temperature to 400°F (200°C) and bake for an additional 10-15 minutes, or until the internal temperature reaches 160°F (71°C).
  • Let the meatloaf rest for 5-10 minutes before slicing and serving.

Notes

  • For extra moisture, sauté the onions before adding them to the meat mixture.
  • You can customize the glaze with BBQ sauce or hot sauce for added flavor.
  • If you prefer smaller portions, you can make individual meatloaf muffins by baking them in a muffin tin for 25-30 minutes at 350°F.
