Ingredients

For the Meatloaf:

  • 1 medium slice of white bread ~30g/1oz
  • 1 small/medium white onion grated
  • 3 tbsp milk preferably whole or semi-skimmed
  • 1 tbsp Worcestershire sauce
  • 500 g 1lb minced/ground beef (20% fat)
  • 2 tbsp finely diced fresh parsley
  • 1 tbsp ketchup
  • 2 cloves garlic minced or grated
  • 1 egg
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • Oil spray for greasing

For the Glaze:

  • 80 g 1/3 cup ketchup
  • 1 tbsp brown sugar packed
  • 2 tsp Worcestershire sauce
  • 2 tsp Dijon mustard

For the Mash:

  • 500 g 1lb potatoes, peeled and diced into chunks
  • 2 tbsp butter room temperature
  • 3-4 tbsp heavy cream room temperature
  • Salt and pepper to taste
  • Finely diced fresh chives for garnish

Instructions

  • Preheat the oven to 180°C/350°F.
  • Make the mashed potatoes: Boil the diced potatoes in salted water until knife-tender. Drain and mash with butter, cream, salt, and pepper. Set aside.
  • Prepare the meatloaf mixture: In a large bowl, soak the bread in milk and Worcestershire sauce. Add grated onion, then mix in the beef, parsley, ketchup, garlic, egg, salt, and pepper. Combine without overworking the mixture.
  • Form and bake: Grease a muffin tin and divide the meat mixture into 8 portions. Press each portion into the tin. Bake for 15 minutes.
  • Make the glaze: Mix ketchup, brown sugar, Worcestershire sauce, and Dijon mustard in a small bowl.
  • Glaze the meatloaf cupcakes: After 15 minutes of baking, carefully pour the glaze over each meatloaf cupcake and return to the oven at 200°C/400°F for another 8-10 minutes until the glaze caramelizes and the meat is cooked through.
  • Top with mash: After baking, pipe or spoon the mashed potatoes on top of the meatloaf cupcakes. Garnish with chives and serve.

Notes

  • Meat: Use high-fat ground beef (20% or more) for the best texture and flavor. Lean meat will dry out.
  • Dietary Variations: You can substitute Worcestershire sauce with a vegan alternative if needed.
  • Make-Ahead: These can be made ahead and stored in the fridge for up to 3 days. Reheat thoroughly before serving.
  • Piping the Mash: If you want to pipe the mashed potatoes, allow them to cool slightly to prevent the piping bag from bursting.
