- 2 lbs Yukon Gold or Russet potatoes about 4 medium-sized
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp salt adjust to taste
- ½ tsp black pepper
- 1 tbsp dried rosemary or 1 tbsp fresh, chopped
- Juice and zest of ½ lemon optional
- ¼ cup grated parmesan cheese optional
