- 2 lbs 85–90% lean ground beef
- 1/2 cup ketchup
- 1/3 cup milk or almond/oat milk
- 1 large egg
- 1 tbsp Worcestershire sauce gluten free
- 2 tsp mustard yellow or Dijon
- 3/4 cup gluten free breadcrumbs or ground oats/almond flour
- 1/4 cup finely diced onion
- 1 tsp dried parsley or 1 tbsp fresh parsley
- 1 tsp salt
- 1/2 tsp black pepper
For the glaze:
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp mustard
Preheat oven to 350°F (175°C) and line a 9-inch loaf pan with parchment.
In a large bowl, gently mix beef, eggs, milk, Worcestershire, mustard, breadcrumbs, onion, parsley, salt, and pepper.
Press mixture into the prepared loaf pan. Bake 40 minutes.
Mix glaze ingredients in a small bowl, spread over meatloaf, return to oven 15–20 minutes.
Check internal temperature: 160°F (71°C). Let rest 5–10 minutes before slicing.
