Ingredients

  • 2 cups mashed potatoes cooled
  • 3 eggs beaten
  • 1 cup shredded Monterey Jack or cheddar cheese divided
  • ¼ cup chopped chives or green onions
  • Salt and pepper to taste
  • Cooking spray or butter for greasing
  • Sour cream or ranch for serving optional

Instructions

  • Preheat oven to 400°F (200°C) and grease a mini muffin tin.
  • Whisk eggs in a bowl until smooth, then season with salt, pepper, and herbs.
  • Fold in cooled mashed potatoes until combined.
  • Stir in most of the shredded cheese and chives.
  • Scoop the mixture into the muffin cups.
  • Sprinkle the remaining cheese on top.
  • Bake for 15–20 minutes until puffed and golden.
  • Let rest for 5 minutes before removing from the pan.
  • Serve warm.

Notes

Let potatoes cool before adding eggs.
Grease the tin well for easy release.
Do not overmix the batter.
Bake on a lower rack first for a crisp base.
