- 1 lb ground chicken
- 4 oz sharp cheddar cheese diced
- ½ cup breadcrumbs use gluten-free for GF option
- 2 tbsp milk
- 1 egg
- 1 tbsp ketchup
- 1 ½ tsp Worcestershire sauce
- ½ red bell pepper chopped
- ½ yellow onion chopped
- 1 clove garlic minced
- ½ tsp ground oregano
- Salt and pepper to taste
- 2 tbsp olive oil for sautéing
- ⅓ cup ketchup for topping
- 1 tbsp brown sugar
- ½-1 tsp ground mustard
Preheat oven to 350°F (175°C).
Sauté onions and bell peppers with olive oil for 2 minutes, add garlic, oregano, salt, and pepper, cook for another minute, then remove from heat.
In a bowl, mix breadcrumbs and milk, then set aside.
In a large bowl, beat egg and add Worcestershire sauce, ketchup, salt, pepper, ground chicken, cheddar cheese, sautéed veggies, and breadcrumb mixture. Mix gently.
Place mixture in a loaf pan and top with a sauce made from ketchup, brown sugar, and mustard.
Bake for 35-40 minutes until fully cooked (internal temperature 165°F or 74°C).
