Ingredients

  • 1 lb ground chicken
  • 4 oz sharp cheddar cheese diced
  • ½ cup breadcrumbs use gluten-free for GF option
  • 2 tbsp milk
  • 1 egg
  • 1 tbsp ketchup
  • 1 ½ tsp Worcestershire sauce
  • ½ red bell pepper chopped
  • ½ yellow onion chopped
  • 1 clove garlic minced
  • ½ tsp ground oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil for sautéing
  • cup ketchup for topping
  • 1 tbsp brown sugar
  • ½-1 tsp ground mustard

Instructions

  • Preheat oven to 350°F (175°C).
  • Sauté onions and bell peppers with olive oil for 2 minutes, add garlic, oregano, salt, and pepper, cook for another minute, then remove from heat.
  • In a bowl, mix breadcrumbs and milk, then set aside.
  • In a large bowl, beat egg and add Worcestershire sauce, ketchup, salt, pepper, ground chicken, cheddar cheese, sautéed veggies, and breadcrumb mixture. Mix gently.
  • Place mixture in a loaf pan and top with a sauce made from ketchup, brown sugar, and mustard.
  • Bake for 35-40 minutes until fully cooked (internal temperature 165°F or 74°C).

Notes

  • You can use ground turkey as an alternative to chicken.
  • To make this dish gluten-free, use gluten-free breadcrumbs.
  • Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
