Ingredients

  • 2 pounds lean ground beef
  • 1 egg
  • 1/2 cup shredded cheddar cheese plus extra for topping
  • 1/2 cup shredded Parmesan cheese
  • 1 tablespoon dried minced onion
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1 teaspoon ground pepper
  • 1/4 cup barbecue sauce plus extra for topping
  • 1/2 cup breadcrumbs

Instructions

  • Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin.
  • In a large bowl, combine ground beef, egg, shredded cheddar, shredded Parmesan, minced onion, garlic powder, salt, pepper, BBQ sauce, and breadcrumbs. Mix until well combined.
  • Scoop the mixture into the muffin tin, pressing down lightly to fill each cup.
  • Bake for 20-25 minutes or until the internal temperature reaches 160°F.
  • Brush BBQ sauce over the top of each mini meatloaf and sprinkle with cheddar cheese.
  • Return to the oven and bake for an additional 5 minutes, until cheese is melted and bubbly.
  • Serve hot with your favorite sides.
