- 2 cups 250 g all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 3/4 cup 150 g packed light brown sugar
- 1/2 cup 100 g granulated sugar
- 1/2 cup 113 g unsalted butter, melted and slightly cooled
- 2 large eggs
- 2 cups 425 g pumpkin puree
Cinnamon Sugar Coating:
- 2/3 cup 133 g granulated sugar
- 2 teaspoons ground cinnamon
- 6 tablespoons 85 g melted unsalted butter
Preheat oven to 350°F (175°C). Grease a donut pan with nonstick spray.
In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
In a separate bowl, mix brown sugar, granulated sugar, and melted butter. Add eggs and pumpkin puree, then stir until smooth.
Gradually add the wet ingredients to the dry ingredients. Mix until just combined—don’t overmix.
Spoon or pipe the batter into the prepared donut pan, filling each cavity 2/3 full.
Bake for 12-14 minutes or until a toothpick inserted into a donut comes out clean. Let cool in the pan for a few minutes before transferring to a wire rack.
Brush the donuts with melted butter, then coat with cinnamon sugar while still warm.
