Ingredients

  • 2 cups 250 g all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 3/4 cup 150 g packed light brown sugar
  • 1/2 cup 100 g granulated sugar
  • 1/2 cup 113 g unsalted butter, melted and slightly cooled
  • 2 large eggs
  • 2 cups 425 g pumpkin puree

Cinnamon Sugar Coating:

  • 2/3 cup 133 g granulated sugar
  • 2 teaspoons ground cinnamon
  • 6 tablespoons 85 g melted unsalted butter

Instructions

  • Preheat oven to 350°F (175°C). Grease a donut pan with nonstick spray.
  • In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
  • In a separate bowl, mix brown sugar, granulated sugar, and melted butter. Add eggs and pumpkin puree, then stir until smooth.
  • Gradually add the wet ingredients to the dry ingredients. Mix until just combined—don’t overmix.
  • Spoon or pipe the batter into the prepared donut pan, filling each cavity 2/3 full.
  • Bake for 12-14 minutes or until a toothpick inserted into a donut comes out clean. Let cool in the pan for a few minutes before transferring to a wire rack.
  • Brush the donuts with melted butter, then coat with cinnamon sugar while still warm.

Notes

  • For a richer flavor, you can add a drizzle of cream cheese frosting or a maple glaze.
  • If you don’t have a donut pan, make donut holes by using a mini muffin tin, increasing the baking time by a few minutes.
  • These donuts are best enjoyed fresh but can be stored in an airtight container for up to 3 days or frozen for up to 1 month.
