Preheat Oven: Preheat the oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper or foil, and lightly grease with non-stick spray.
Prepare Meat Mixture: In a large mixing bowl, combine the ground beef (or chosen meat), panko breadcrumbs, milk (or broth), egg, Worcestershire sauce, ketchup, Italian seasoning, garlic powder, onion powder, salt, and pepper. Mix gently until just combined, being careful not to overwork the meat.
Shape the Meatloaf: Take half of the meat mixture and place it in the prepared pan or shape it into a loaf on the baking sheet. Press it down to form an even layer. Add the slices of mozzarella cheese in the center, leaving a small border around the sides. Top with the remaining meat mixture and seal the edges to enclose the cheese.
Prepare Sauce: In a small bowl, mix together ketchup and brown sugar (or BBQ sauce if using) until smooth. Pour the sauce over the top of the meatloaf, spreading it evenly with a spatula.
Bake: Bake for about 45 minutes, or until the internal temperature reaches 160°F (71°C). The meatloaf should be fully cooked and have a golden, caramelized top.
Rest and Slice: Allow the meatloaf to rest for 5-10 minutes before slicing. This helps the juices redistribute and ensures a moist, tender loaf.
Serve: Slice and garnish with chopped fresh parsley. Serve with your favorite sides!
