Ingredients

For the Meatloaf:

  • 1 ½ pounds 80%-90% lean ground beef or ground turkey, chicken, or a mix of pork and beef
  • ½ cup panko breadcrumbs
  • ¼ cup milk or beef broth
  • 1 large egg whisked
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons ketchup
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper plus more for topping, optional
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4-8 ounces mozzarella cheese sliced (fresh mozzarella works best)

For the Sauce:

  • cup ketchup or BBQ sauce, or a mix of both
  • 2-3 tablespoons light brown sugar
  • Fresh parsley chopped (for garnish)

Instructions

  • Preheat Oven: Preheat the oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper or foil, and lightly grease with non-stick spray.
  • Prepare Meat Mixture: In a large mixing bowl, combine the ground beef (or chosen meat), panko breadcrumbs, milk (or broth), egg, Worcestershire sauce, ketchup, Italian seasoning, garlic powder, onion powder, salt, and pepper. Mix gently until just combined, being careful not to overwork the meat.
  • Shape the Meatloaf: Take half of the meat mixture and place it in the prepared pan or shape it into a loaf on the baking sheet. Press it down to form an even layer. Add the slices of mozzarella cheese in the center, leaving a small border around the sides. Top with the remaining meat mixture and seal the edges to enclose the cheese.
  • Prepare Sauce: In a small bowl, mix together ketchup and brown sugar (or BBQ sauce if using) until smooth. Pour the sauce over the top of the meatloaf, spreading it evenly with a spatula.
  • Bake: Bake for about 45 minutes, or until the internal temperature reaches 160°F (71°C). The meatloaf should be fully cooked and have a golden, caramelized top.
  • Rest and Slice: Allow the meatloaf to rest for 5-10 minutes before slicing. This helps the juices redistribute and ensures a moist, tender loaf.
  • Serve: Slice and garnish with chopped fresh parsley. Serve with your favorite sides!

Notes

  • Freezing Instructions: For meal prep, freeze the uncooked meatloaf (without the sauce) by wrapping it tightly in plastic wrap, then foil. When ready, thaw in the fridge overnight, top with sauce, and bake as usual.
  • Cheese Alternatives: While mozzarella is the traditional choice, feel free to experiment with other cheeses like provolone, gouda, or cheddar for different flavors.
  • Customizations: Add red pepper flakes for heat or sprinkle grated Parmesan inside the meat mixture for extra flavor.
