Ingredients

  • For the Meatloaf:
  • 2 lbs ground beef 80–85% lean
  • 1 medium onion finely chopped
  • 1 tsp olive oil
  • 3 garlic cloves minced
  • 2 large eggs
  • ¾ cup Panko breadcrumbs
  • cup milk
  • 2 tbsp ketchup
  • 3 tbsp fresh parsley chopped
  • 1 tsp salt
  • 1 tsp Italian seasoning
  • ½ tsp ground black pepper
  • For the Glaze:
  • ¾ cup ketchup
  • tsp white vinegar
  • 2 tbsp brown sugar
  • ½ tsp garlic powder
  • ½ tsp onion powder

Instructions

  • Preheat Oven:
  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  • Sauté Onions:
  • In a skillet, heat olive oil over medium heat. Sauté chopped onions for 5–7 minutes until soft and golden. Let cool slightly.
  • Mix Ingredients:
  • In a large bowl, combine ground beef, sautéed onions, garlic, eggs, breadcrumbs, milk, ketchup, parsley, salt, Italian seasoning, and pepper. Mix gently with your hands until combined.
  • Shape the Meatloaf:
  • Transfer the mixture onto the baking sheet. Shape it into an 8x4-inch loaf. Bake uncovered for 40 minutes.
  • Prepare Glaze:
  • In a small bowl, whisk together ketchup, vinegar, brown sugar, garlic powder, and onion powder.
  • Add Glaze and Bake Again:
  • Brush the glaze over the meatloaf and return to the oven. Bake for another 20 minutes or until internal temperature reaches 160°F (71°C).
  • Rest and Serve:
  • Remove from the oven and let rest for 10–15 minutes before slicing. Serve warm with mashed potatoes or vegetables.

Notes

Do not overmix the meat mixture—it can make the loaf tough.
 For a richer flavor, combine ground beef and ground pork.
