- For the Meatloaf:
- 1 to 1¼ lbs ground turkey 8–10% fat blend recommended
- 1 tbsp olive oil
- 1 cup finely chopped mushrooms
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 cup breadcrumbs panko preferred
- ⅓ cup milk
- 2 large eggs lightly beaten
- 1 tbsp Worcestershire sauce
- 7 tbsp ketchup 4 tbsp for mix, 3 tbsp for glaze
- 1 tsp salt
- ½ tsp black pepper
Preheat Oven:
Preheat to 400°F (204°C). Line a baking sheet with foil or lightly grease it.
Cook Aromatics:
In a skillet, heat olive oil over medium-low heat. Add onion and cook 5 minutes. Stir in garlic and mushrooms, cooking until softened and most moisture evaporates (about 8–10 minutes). Let cool.
Soak Breadcrumbs:
In a small bowl, mix breadcrumbs and milk. Let soak until moist.
Combine Mixtures:
In a large bowl, combine the mushroom-onion mix, soaked breadcrumbs, eggs, Worcestershire sauce, 4 tbsp ketchup, salt, and pepper. Mix gently.
Add Turkey:
Add ground turkey and combine lightly with your hands. Do not overmix.
Shape the Loaf:
Transfer mixture to the baking sheet and shape into an oval loaf (about 9x5 inches). Spread remaining 3 tbsp ketchup evenly on top.
Bake:
Bake for 50 minutes, or until internal temperature reaches 170°F (77°C).
Rest and Serve:
Let the meatloaf rest for 10 minutes before slicing. Serve warm.
