Ingredients

  • 1 cup canned pumpkin puree
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 cup sugar or coconut sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts optional

Instructions

  • Preheat oven to 350°F (175°C). Grease a loaf pan.
  • In a bowl, mix flour, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, whisk pumpkin puree, oil, sugar, eggs, and vanilla.
  • Combine wet and dry ingredients. Stir until just mixed (do not overmix).
  • Fold in walnuts, if using.
  • Pour batter into prepared pan and bake for 45-50 minutes, or until a toothpick comes out clean.
