- 1 cup canned pumpkin puree
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 1 cup sugar or coconut sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts optional
Preheat oven to 350°F (175°C). Grease a loaf pan.
In a bowl, mix flour, baking soda, cinnamon, nutmeg, and salt.
In another bowl, whisk pumpkin puree, oil, sugar, eggs, and vanilla.
Combine wet and dry ingredients. Stir until just mixed (do not overmix).
Fold in walnuts, if using.
