Ingredients

  • For the Meatloaf:
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • lbs meatloaf mix ground beef, pork, and veal
  • 2 large eggs lightly beaten
  • cup whole milk
  • cup ketchup +2 tbsp for glaze
  • 1 tbsp Dijon mustard
  • tbsp Worcestershire sauce
  • ¼ cup fresh parsley minced
  • 1 cup panko breadcrumbs
  • 2 tsp kosher salt
  • ½ tsp black pepper
  • 1 tbsp brown sugar
  • 12 strips thick-cut bacon

Instructions

  • Preheat Oven:
  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or nonstick foil.
  • Sauté Vegetables:
  • Heat olive oil in a skillet over medium heat. Add onion and cook for 3–5 minutes until soft. Add garlic and cook 2 more minutes. Remove from heat and cool.
  • Make Meatloaf Mixture:
  • In a large bowl, combine meatloaf mix, eggs, milk, breadcrumbs, ketchup, Dijon mustard, Worcestershire sauce, parsley, salt, pepper, and the cooled onion-garlic mixture. Mix gently until just combined.
  • Shape the Meatloaf:
  • Form the mixture into a loaf (about 2–3 inches tall) on the prepared baking sheet.
  • Glaze:
  • In a small bowl, mix 2 tbsp ketchup with 1 tbsp brown sugar. Brush the glaze over the top and sides of the loaf.
  • Wrap with Bacon:
  • Lay bacon strips over the loaf, slightly overlapping until the entire loaf is covered.
  • Bake:
  • Bake for 1 hour–1 hour 15 minutes, until the internal temperature reaches 160°F (71°C). Rotate the pan halfway through for even cooking.
  • Rest and Serve:
  • Let the meatloaf rest for 10 minutes before slicing to allow juices to redistribute. Slice and serve warm.
