Ingredients

  • 1 pound boneless skinless chicken breasts (cut into bite-sized pieces)
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ cup buttermilk
  • 1 large egg
  • 2 cups panko breadcrumbs
  • Olive oil spray or avocado oil spray

Instructions

  • Prep the Chicken
  • Cut the chicken into small, even cubes and season with salt and pepper.
  • Prepare Coating Stations
  • In a shallow bowl, mix flour, garlic powder, and paprika. In another bowl, whisk together buttermilk and egg. Pour panko breadcrumbs into a third bowl.
  • Coat the Chicken
  • Dredge each chicken piece in flour, then dip into the buttermilk mixture, and finally coat with panko breadcrumbs. Press gently so crumbs stick.
  • Preheat the Air Fryer
  • Preheat to 400°F (200°C) for 3 minutes. Lightly grease the basket with oil spray.
  • Air Fry the Chicken
  • Place chicken pieces in a single layer (avoid overlapping). Spray lightly with oil and cook for 5 minutes. Flip, spray again, and cook for another 4–5 minutes until golden brown and crispy.
  • Check Doneness and Serve
  • Ensure internal temperature reaches 165°F (74°C). Serve warm with your favorite dipping sauces.

Notes

  • Cut chicken into equal sizes for even cooking.
  • Avoid overcrowding the basket for maximum crispiness.
  • Rest coated chicken for 5 minutes before air frying to help the breading stick.
  • Use chicken thighs for a juicier texture.
  • For extra crunch, double-dip in buttermilk and breadcrumbs.
  • Reheat leftovers at 375°F for 4–6 minutes to restore crispiness.
  • To make it spicy, add cayenne or hot sauce to the buttermilk mix.
