Add mashed potatoes, shredded cheese, egg, breadcrumbs, Parmesan, garlic powder, onion powder, salt, and pepper to a mixing bowl. Stir well.
Scoop and roll the mixture into golf-ball-sized balls.
Roll each ball in breadcrumbs until fully coated.
Preheat the air fryer to 375°F (190°C).
Spray the air fryer basket lightly with cooking spray.
Place the potato balls in a single layer. Spray the tops lightly.
Air fry for 7–10 minutes, shaking halfway, until golden and crispy.
Serve hot with your favorite dipping sauce.
