Ingredients

For the Chicken:

  • 2 boneless skinless chicken breasts (about 8 ounces each), cut into ½-inch cubes
  • 1/2 medium lemon juiced
  • 1/4 teaspoon kosher salt plus 1/8 teaspoon for seasoning
  • 1 tablespoon extra virgin olive oil
  • 4 small cloves garlic minced (or through a garlic press)
  • 1/2 teaspoon Italian seasoning or use a blend of dried herbs
  • 2 tablespoons grated Pecorino Romano cheese optional for a rich, salty flavor
  • 1/4 cup seasoned breadcrumbs or gluten-free breadcrumbs for a gluten-free option
  • Olive oil spray to prevent sticking in the air fryer

For the Salad (Optional but recommended):

  • 2 tablespoons chopped red onion
  • 1 large clove garlic minced (or 2 small cloves)
  • 2 teaspoons extra virgin olive oil
  • 2 teaspoons red wine vinegar
  • 1/4 teaspoon kosher salt plus freshly ground black pepper to taste
  • 2 mini cucumbers diced
  • 1/2 medium avocado diced (about 2.5 ounces)
  • 2 cups chopped romaine lettuce

Instructions

  • Marinate the Chicken: In a large bowl, combine the diced chicken with lemon juice, salt, olive oil, garlic, Italian seasoning, grated Pecorino Romano cheese, and breadcrumbs. Toss everything together until the chicken is evenly coated. Let it marinate for about 10 minutes.
  • Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 3-5 minutes to ensure even cooking.
  • Coat the Chicken: Spray the air fryer basket with olive oil to prevent sticking. Arrange the breaded chicken in a single layer in the basket, making sure not to overcrowd the chicken pieces.
  • Air Fry the Chicken: Air fry at 400°F for 7 to 8 minutes. At the halfway mark (around 3-4 minutes), shake the basket or use tongs to turn the chicken pieces over. Lightly spray the chicken with more oil and continue air frying for the remaining time. The chicken is done when it is golden brown and the internal temperature reaches 165°F.
  • Prepare the Salad (Optional): While the chicken is cooking, prepare the salad. In a small bowl, combine the chopped red onion with garlic, olive oil, red wine vinegar, salt, and pepper. Let it sit for 5-8 minutes to allow the flavors to meld. Add the diced cucumbers and avocado, and toss everything together.
  • Serve: Once the chicken is cooked, serve it alongside the salad, or you can top the chicken with the fresh salad.

Notes

  • For extra crispiness, spray the chicken lightly with more oil halfway through cooking.
  • Marinating the chicken for longer will add more flavor and tenderness.
  • Storage: Leftover Air Fryer Breaded Chicken Breast can be stored in an airtight container in the fridge for up to 4 days.
  • Freezing: After cooking, allow the chicken to cool and then flash-freeze on a baking sheet for 1-2 hours. Store in a freezer-safe bag for up to 3 months.
